Ingredients for Vegan Quesadillas
- 1 tsp olive oil
- 1/2 cup red bell pepper, diced
- 1 cup frozen corn
- 1/2 cup black beans, drained and rinsed
- 1 tsp Mexican seasoning
- salt and pepper, to taste
- juice of 1 lime
- 3/4 cup grated vegan mozzarella cheese, divided
- 1 tbsp fresh chopped cilantro
Instructions for Vegan Quesadillas
- Heat olive oil in a medium sized saute pan over medium heat.
- Add red peppers, black beans and frozen corn
- Sprinkle on Mexican seasoning, salt, and pepper.
- Cook for 3 to 5 minutes.
- Mix in the lime juice.
- Remove from heat and place on back burner.
- In a hot skillet, lay one tortilla and add 1/4 cup filling.
- Add 2-3 tbsp of shredded vegan cheese.
- Top with another tortilla and press down with spatula in skillet.
- Flip and cook until both sidea are browned and insides are hot.
