Potato Bacon Soup Recipe for a Winter Evening

A basic potato soup recipe that works well on a winter evening uses bacon along with many kinds of ingredients to make a nice, appetizing soup. The sight of chunky bacon in a steaming bowl of freshly made soup is enough to warm anyone’s heart, which is why this is a top favorite of many families. Here is a delicious potato bacon soup recipe for the entire family.

Get rashers bacon from the market to use in your potato bacon soup. Coarsely chop the bacon, removing the rind first. Choose several large potatoes and dice them into large cubes. Chop celeries for the soup and keep aside. Slice several onions. Preheat a pan and cook bacon pieces with slices of onion and chopped garlic, and then add in the potato cubes and cook for several more minutes. Pour a large quantity of vegetable or chicken broth in the pan and let it boil. Keep the mixture on a low flame letting it simmer.
To thicken the soup, mix flour in a cup of milk, stirring it in the mixture slowly. As the soup continues to gain consistency keep increasing the heat. Leave some of the potatoes chunky and mash the rest roughly. Remove the mashed bits and place in a food processor to make a puree. Return the potato puree to the soup, stirring in a bit of sour cream if you want to make it really rich and creamy. Otherwise, skip the cream and add some onion slices as a garnish. Your potato bacon soup is ready to eat. Once done, it looks chunky and the bacon bits add richness to the potato mixture.
